Yukon Roasted Horseradish and Bacon Taters

serves 4

2 half sheet pans

parchment paper

medium size bowl

whisk

1/2 cup mayo

1/2 cup sour cream

1/4 cup prepared horseradish

1/4 cup fresh chives (minced)

1 Tbsp fresh rosemary (minced)

1 cup fresh parsley (minced)

1 tbsp granulated garlic or fresh chopped garlic

2 packages of bacon

1/2 bag of Yukon potatoes

1/4 stick unsalted butter (melted)

Salt and Pepper TT


  1. Preheat oven to 350 degrees
  2. Quarter potatoes with skin on
  3. Cook bacon on sheet pans on parchment paper
  4. Reserve all bacon grease (mix with melted butter)
  5. Mince cooked bacon and reserve
  6. Toss taters in fat mixture and roast in oven until crispy
  7. Combine mayo, sour cream, horseradish, chives, rosemary and garlic in mixing bowl and whisk
  8. Taste mixture and add salt/pepper TT and more horseradish depending on palette
  9. Once taters are done, toss in horseradish mixture, add bacon and garnish with parsley
  10. Serve and receive compliments
