Saucy’s Famous Yukon Roasted Horseradish and Bacon Taters
Yukon Roasted Horseradish and Bacon Taters
serves 4
2 half sheet pans
parchment paper
medium size bowl
whisk
1/2 cup mayo
1/2 cup sour cream
1/4 cup prepared horseradish
1/4 cup fresh chives (minced)
1 Tbsp fresh rosemary (minced)
1 cup fresh parsley (minced)
1 tbsp granulated garlic or fresh chopped garlic
2 packages of bacon
1/2 bag of Yukon potatoes
1/4 stick unsalted butter (melted)
Salt and Pepper TT
- Preheat oven to 350 degrees
- Quarter potatoes with skin on
- Cook bacon on sheet pans on parchment paper
- Reserve all bacon grease (mix with melted butter)
- Mince cooked bacon and reserve
- Toss taters in fat mixture and roast in oven until crispy
- Combine mayo, sour cream, horseradish, chives, rosemary and garlic in mixing bowl and whisk
- Taste mixture and add salt/pepper TT and more horseradish depending on palette
- Once taters are done, toss in horseradish mixture, add bacon and garnish with parsley
- Serve and receive compliments
